Cattle

Lazy Acre is our sister company and raises our cattle. They follow regenerative farming practices and take the absolute best care of all their animals. They are also currently the ONLY cattle ranch in Colorado with their own USDA processing facility onsite. Because of this, the cows have wonderful lives, and on their last day, they simply walk up to our back door. This reduces stress on the animals and makes your products that much better. The cows don't undergo travel stress or fear of a large processing facility. Lazy Acre follows all USDA slaughter and processing requirements. 

After Slaughter and initial processing, the beef hangs for 7-14 days. This allows the meat to cool and age slightly for flavor and quality. After this, the carcass is halved and quartered for transport to our shop, The Butcher’s Hook. After arrival at The Hook, our team hand breaks down each quarter of the animal to effectively use every single part. This provides you with more options and helps reduce waste and loss. 

Each steak or cut of meat is vacuum sealed to order, refrigerated fresh or frozen for your long-term storage needs. Some items are saved and set aside for our special and minimal dry aging program. Because we are a small shop, we have less space for aging. This means our stock is limited but always top quality. 

Occasionally, we source beef from a second ranch called Buckner Family Farms. This ranch specializes in grass-fed and finished cattle. They, too, follow regenerative and organic practices.
